Elevated Avocado Toast

One of my favorite meals to make is toast. I even wrote a whole cookbook a few years ago called Let’s Toast, full of my toast recipes, that I never published and keep just for my own personal use. Sweet toast, savory toast, fresh toast, all the toasts.
I wanted to share a new recipe I made up last week because it turned out soooooo good. It’s high in protein, loaded with nutrients, and absolutely delicious.
The only thing I didn’t have enough time to do this time, but will definitely do next time, is roast a garlic and smear that onto the toast before everything else.

Ingredients:
Sourdough bread
2 avocados
1 bag of edamame
Lemon infused olive oil
Garlic infused olive oil
Black pepper infused olive oil
2 very large tomato’s
2 green onions
Cilantro (as much as you’d like)
Salt
Red pepper flakes
White pepper
Let’s do it!
Boil edamame in lightly salted water until thoroughly cooked then set aside to cool.
While that is cooking, Slice the tomatoes into thick slices, coat with garlic and black pepper olive oils, salt, chopped cilantro and chopped green onions. Stir well and let marinate.

Pour edamame, 2 avocados, lemon olive oil, a splash of water and a pinch of salt into a blender and blend until smooth.

While the green base is blending, toast your sourdough slices.

Top your toast with the high protein avocado and edamame base. If you roasted a garlic, spread that on first, then the avocado/edamame spread. Then top with marinated tomatoes and sprinkle with sea salt
